Green Beans with Red Pepper and Nutmeg

Bright green beans tossed with strips of red pepper make a colourful and delicious flavour combo.

1-1/2 lb green beans, trimmed
2 tbsp olive oil
1 sweet red pepper, cut in thin strips
¼ tsp each, nutmeg and salt
pinch pepper

Cut beans in half if large. In saucepan of boiling water, cook beans for 6 to 8 minutes or until tender-crisp; drain and set aside.

Wipe out pot; add oil and heat over high heat. Cook red pepper, stirring for 2 minutes or until softened. Add beans, nutmeg, salt and pepper; remove from heat and toss well. Taste and adjust seasoning if necessary. Makes 6 servings.

Quinoa and Green Bean Salad

1 1/2 cups green beans, trimmed and chopped into 1/4-inch pieces
2 cups cooked quinoa
1/2 cup chopped toasted walnuts
1/2 cup chopped parsley
2 scallions, chopped
2 tbsp. fresh mint, chopped
3 tbsp. extra-virgin olive oil
1-1/2 tbsp. lemon juice
1 garlic clove, minced
Salt and black pepper, to taste

Cook the green beans in boiling, salted water for 2 minutes, until tender but still
crunchy. Rinse under cold water, drain and pat dry. Combine with the quinoa,
walnuts, parsley, scallions, and mint in a large bowl.
Whisk together the oil, lemon juice, garlic, salt, and pepper. Pour over the salad
and toss to blend. Let stand for 10 minutes before serving.

Carrot and Green Bean Picadillo

1 tbsp olive oil
1 large onion
4 garlic cloves
3 cups peeled and cubed carrots
3 cups diced green beans
1 tbsp dried oregano
1 tsp ground coriander
½ tsp cumin
1 tsp paprika
1 bay leaf
salt and pepper to taste

Heat olive oil to med-heat in a large skillet. Sauté the onions and garlic until they soften. Add carrots and green beans, stir and turn heat to low. Add all the spices and cook slowly, stirring occasionally for about 20 minutes or until desired consistency. Taste and add a pinch of salt and pepper if needed. You may also add a pinch of cayenne pepper of your favorite low sodium hot sauce.
