Stuffed Grape Leaves:
- thirty grape leaves
- one cup of brown rice
- goat feta cheese (crumbled)
- small onion (finely chopped)
- 14 olives (chopped)
- two lemons
Cook brown rice. In a bowl, mix rice, olives, cheese, onion, and the juice of half a lemon.
Dip grape leaves in boiling water for five seconds. Chop off stems. Squeeze the juice of half a lemon onto the leaves.
Place a small amount of the rice mixture into the center of a leaf. Roll like a cabbage roll. Continue to stuff the leaves until the mixture is used up. Should make around 30 stuffed leaves, depending on the size.
Place the stuffed leaves in the bottom of a Pyrex baking dish. Pour the juice of the remaining lemon over the leaves. Bake for 20 minutes at 350 degrees. Cool and serve.

Try using ground lamb or cooked vegetables in the stuffing.
