Zucchini salsa

Zucchini salsa

Ingredients
  • 10 cups of zucchini( you can either peel them or not)
  • 4 oinions
  • 2 red peppers
  • 2 green peppers
  • ¼ cup plus 1 tbsp course salt

Instructions
  1. Combine the above ingredients and let sit overnight.
  2. The next morning;
  3. Drain and rinse the mixture.
  4. Then:
  5. Bring to a boil and add;
  6. cups of tomatoes
  7. cup brown sugar
  8. cups white vinegar
  9. small(6 oz) cans of tomatoe paste
  10. tbsp dry mustard
  11. tbsp of cumin
  12. Bring to a boil again, then add;
  13. tbsp crushed chili peppers
  14. tbsp cornstarch
  15. tbsp nutmeg
  16. tbsp garlic powder
  17. Simmer mixture until burnt orange in color
  18. You can get 12 jars or more depending on what sizes you use.
  19. I usually buy 2 gigantic zucchinis and that gives me 10 cups.
  20. Also, this year I did all the veggies in the food processor.
  21. It turned out good, but I think I’ll go back to chopping the tomatoes by hand for my next batch.
